Homemade Minestrone Soup



An extremely healthy vegetarian soup to add to your menu at home! And it's also super easy to make! Loaded with veggies, it's surely going to warm your soul. If you are in a rush and don't have much time, you can always throw this in the crock pot instead! Super easy!



MINESTRONE SOUP


INGREDIENTS

2-3 Table spoons of olive oil
1 cup chopped onion
1/2 cup chopped zucchini
1/2 cup chopped yellow squash
1/2 cup chopped green beans
1/2 cup celery
1/2 cup chopped carrot
1 can kidney beans
1 can garbanzo beans
1 can diced tomatoes
1 teaspoon garlic (dried or chopped)
1 teaspoon Italian seasoning
1 teaspoon salt
1/2 teaspoon pepper
4 cups water
4 teaspoons vegetable broth (vegetable stock mix)
1/2 can spaghetti sauce
1/2 cup shopped spinach
1 1/12 cups pasta


DIRECTIONS

Saute the vegetables in the olive oil for 5 min
Add canned items and seasonings.
Add water and vegetable broth
Add spaghetti sauce
Cook for about 30-40 minutes on medium heat until flavors meld together

After soup is done, add pasta and chopped spinach.

Enjoy!


**side note! depending on your preference on how thick or thin you like your soup, you can always add more water and veggie broth.
