Rice Pudding

Just 'pudding' this lightly but this is the yummiest treat EVER!


I had never had it until I entered the Swenson family. Dave's mom makes rice pudding and it's ALWAYS a family favorite. and let me tell ya--it's now one of my favorites too! Especially with how easy the recipe is! Here is the Recipe from my mother-in-law.

Pudding and Pie Filling Mix
5 1/2 cups sugar
2 cups cornstartch
1 tsp. salt
1 1/2 cups nonfat dry milk

(this will be enough for like 5 batches of rice pudding! It's a lot)

Rice Pudding
Cook 1 cup rice in rice cooker. Mix 1 1/4 cups pudding and pie filling mix. Add 3/4 cup evaporated milk along with 2 cups milk. Cook over medium heat until bubbly stirring constantly so it will not burn on the bottom. When it is thick, beat two egg yolks and add a little of the hot mixture to the eggs and beat well. Then add the eggs to the pudding mixture. Cook one minute.
Take off heat and add 1 tsp. vanilla and 2 tbs. butter. Add 1 tsp. cinnamon and rice to your liking.
