Pumpkin Bread Recipe

PUMPKIN BREAD


YEILD: 2 loaves
PREP TIME: 20 minutes
COOK TIME: 60 minutes


INGREDIENTS

1 (15 ounce) can pumpkin puree
4 eggs
1 cup vegetable oil
2/3 cup water
2 teaspoons pure vanilla extract
2 1/2 cups sugar
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
2 tablespoons cinnamon
1 cup chocolate chips


DIRECTIONS

1. Preheat oven to 350 degrees F. Grease and flour two 8.5 x 2.5 inch loaf pans.
2. In a large bowl with an electric mixer, combine pumpkin, eggs, oil, water, vanilla and sugar until well blended.
3. In another large bowl, whisk together the flour, baking soda, salt and cinnamon until well combined.
4. Stir the dry ingredients into the pumpkin mixture until just blended. Mix in chocolate chips. Pour batter into the prepared pans.
5. Bake in preheated oven for 60-70 minutes or until a toothpick inserted in the center comes out clean.
